Fresh and Simple

I love to find simple fast, yet Fresh recipes. As someone who grows their own vegetables, I know the huge difference from fresh and store bought. A few years ago we moved back East to N.C. and were caught off guard by the lack of fresh produce in the stores. Where we had lived in CA, the vegetables and fruit, even meat had been local. Local and fresh! We ended up moving back to CA, and breathed a sigh of relief to taste the real stuff again. 
 Store bought tends to be watery in my opinion, it really doesn't matter what it is you pick up anymore. There's more vegetables that lack taste, more fruit that tastes like water even if it's bigger. It's disappointed to say the least. Even though I grow vegetables, and lots of them, it only lasts from the span of summer, to late fall, and that's if the garden takes off.
   As a family of six, buying organic isn't always a choice, we have expenses that come first, but we've been switching over due to the huge lack of taste in food. Farmers markets are a HUGE find for fresh, locally grown foods. Check them out in your area, make that drive if you have to and pick up some of the best produce you'll possibly ever taste. The key is to find it locally grown, it means you've got the best chance for the fresh and less handled foods that aren't at the stores. Even some organic marked foods aren't worth it, I say Local is totally worth the effort you put into finding it!

This dish was all locally grown, and if I do say so my self, smacking lips good!


Sauteed Corn

Ingredients
3-1/3 cups fresh corn  (you can use frozen- 1 package (16 ounces) frozen corn, thawed )
1 tablespoon butter
1 plum tomato, chopped
1 medium onion chopped
1 tablespoon lime juice (if you've got the limes, use them!)
1/2 teaspoon salt
1/2 teaspoon ground cumin
1/3 cup minced fresh cilantro
1 cup chopped bell pepper mix (I freeze 1 bell pepper of each after chopping, just take out a cup of that or chop it to use in the dish.) You can use less if you want, we love peppers around here :) 1/2 would be good as well.

Directions
In a large nonstick skillet, saute onion and peppers (if using) in butter until tender. Add corn and heat till tender. Reduce heat to medium-low; add the tomato, lime juice, salt and cumin. Cook and stir for 3-4 minutes or until heated through. Remove from the heat; stir in cilantro.

This dish was tasty, you can taste the lime, but it's not over powering. It was a fresh wonderful change from plain corn on the table. Enjoy!
