Oh My It’s Friday!

   Friday’s around here are like parties. I have two kids in school, two out. If the school kids had a great week, they get to pick dinner and we pretty much party it out with music, games, and anything that we don’t do daily. It can also be really loud as ,again four kids, they have a mind of their own.This one hates that song, that one doesn’t like the game, that one over there eats the dice, and that one over there just wants to flick it across the table. The movie is rotten, the popcorn is too hot, or too cold. That one is sitting too close, that one is looking at the other one. This one drooled, that one made a funny noise at the other two and that one  there took the toy yet again from this one.I can picture the arguments before they even happen. I’m always ready for it, but it still amazes me just how much they can argue about everything. Seriously, everything!

    If they all agree I think my jaw would drop right to the floor. It would just go, plop, right down on the floor. They’ve never agreed on anything before, and if they had it lasted just long enough for an argument to spark and that rare moment vanished before I enjoyed it.
    I do admit even with all the arguments that flare up, It’s pretty amazing that they do have different opinions and ideas . Everyone does of course, but being a parent you get to watch it develop and that right there is amazing to see. It’s down right awesome to watch them grow and learn new things.  This week though full of so much chaos, I got to whiteness one of those rare moments that are only caught in a blink of an eye.

Better yet, it was FOOD! I have one major picky eater so this was a blast full of shock for me. The funny thing though? I cooked the thing wrong !! ha ha

I stumbled around a little bit, rubbing my eyes, wondering if the world flipped upside down. Did someone switch my kids? Did cows start flying? Was I dreaming? Nope.
 They downed this dinner fast enough I didn’t even have time to pour them drinks before they were asking for more. Finally, one thing they agree on!

Behold, the tiny little morsel that captivated the taste buds of my kids. Silencing them for all of 5.45 minutes in an entire day!

Meatloaf Muffins!!! I got this from Cooking light.
My mistake was completely forgetting to add the crackers as well as eggs. I had planned on adding  a small shredded zucchini into it.By the time I added that in, it had already looked really moist to me, so I just left the eggs out. The test muffins did in fact come out too moist, so the amount needs work.Think it would be a great thing to sub in though the next time. The rest was made with the eggs, and yet still no crackers!
Here you go, Meat Loaf Muffins

1 teaspoon olive oil
1 cup finely chopped onion
1/2 cup finely chopped carrot
1 teaspoon dried oregano
2 garlic cloves, minced
1 cup ketchup, divided
1 1/2 pounds ground beef, extra lean (raw)- You could use ground turkey as well
1 cup finely crushed fat-free saltine crackers (about 20)
2 tablespoons prepared mustard
1 teaspoon Worcestershire sauce
1/4 teaspoon freshly ground black pepper
2 large eggs-
Cooking spray
Preheat oven to 350°.

Heat the olive oil in a large nonstick skillet over medium-high heat. Add chopped onion, chopped carrot, dried oregano, and minced garlic; sauté 2 minutes. Cool.

Combine onion mixture, 1/2 cup ketchup, and the remaining ingredients except cooking spray in a large bowl.

Spoon the meat mixture into 12 muffin cups coated with cooking spray. Top each with 2 teaspoons ketchup. Bake at 350° for 25 minutes or until a thermometer registers 160°. Let stand for 5 minutes.
They were really good. I liked that they had carrots in them. my kids called them Meatballs, and this Mommy won’t even try to tell them differently! 🙂
   Did these very early in the morning to save myself from heating up the oven during a heat spell. They really do look like meatballs 🙂 Not a single one of them fell apart when I took them out of the muffin tin, so I was able to set them in a foil pan to cool off before putting them in the fridge.

    Sometimes the biggest mistakes come out the best. I had this cake I baked once that was so ugly to look at but so great tasting that I actually got requests to bring it to other pitch in. Who would have thought?
