Sweet Treat Friday – Cinnamon Bread

My Kids love having Cinnamon Bread for a snack after school. It’s quick, it’s sweet, and fresh from the oven you just can’t go wrong.

Cinnamon Quick Bread  (recipe from Pillsbury Best Muffins & Quick Breads cookbook)

Ingredients for Bread
2 cups flour
1 cup sugar
4 teaspoons baking powder
1 1/2 teaspoons cinnamon
1/2 teaspoon salt
1 cup buttermilk
1/3 oil (I leave the oil out half the time)
 2 teaspoon vanilla
2 eggs

Streusel ingredients
2 tablespoons sugar
1 teaspoon cinnamon
2 teaspoons softened butter

Directions for bread
 Preheat oven to 350F. Grease and flour the bottom only of bread loaf pan (9×5)
In a large bowl combine all the bread ingredients and beat until combined. Pour batter into greased pan. In a small bowl mix together the Streusel ingredients and mix till crumbly . Sprinkle over the batter and swirl into the batter.
Bake at 350 for about 45-50 minutes or until a toothpick comes out clean from the center. Top of center may look “moist” but as long as the toothpick comes out clean it’s finished. The top may  brown too fast so check it at 40 minutes.  Cool in pan for 15 minutes, before removing from pan. Cool an hour if you have the patience to wait that long, otherwise, be carefully when cutting it’s warm 🙂
   I can never wait for bread to cool to cut into it, quick breads though tend to crumble easily when they are fresh from the oven. My kids don’t care with this bread if it crumbles, splits, breaks apart, they love it! It tastes amazing when warm!  Store if there’s any leftovers, in the refrigerator.
