Sweet Treat Friday- Irish Potato Candy

This recipe came from a wonderful Friend of mine, Becki who got it through some women at her Church. I’m so glad she shared it with me because it’s a winner! We first made it a couple years ago when my son needed a recipe to make and share with his entire class. It’s easy, and best of all everyone  is always surprised at the ingredients when they ask. Irish Potato Candy has now made it’s way into my Holiday recipe cookbook and won’t ever be forgotten. Everyone always loves them, and they disappear so fast.  Try it, you will be surprised as well as delighted at how tasty they are!

These aren’t rolled in sugar just yet. I place them in bags, date them and freeze them!

Irish Potato Candy
Ingredients
1/3 c. mashed potatoes (you can use boxed but I prefer real left over mashed potatoes)
1 3/4 c. powder sugar
2 2/3 c. coconut
1/8 tsp. salt
 1 c. pecans, minced
1/2 tsp. vanilla
cinnamon , powder sugar or almond bark
Directions

Mix first 6 ingredients well. Roll into small balls. I find it easier to keep the dough chilled and tale out a little at a time to roll, other wise it gets really sticky.  Place on a cookie sheet and chill until firm. Roll in cinnamon, sugar or almond bark and place on a wax paper. Keep them chilled till serving time.
Makes about 48 balls.

The kids love helping me make these, and it’s simple enough for them to do it as well. I normally freeze the balls without coating them and take them out for the holiday dinners the day before.
