Sweet Treat Friday – Caramel Pecan Brownies

This is a blend of recipes really, and I know you’ll love it no matter what. I took my favorite Brownie Recipe, which you can find here , or use which ever one you like. To make this even more fun, you can either bake it into some rounds pans (probably two) or just  bake in the 8×13 pan, and cut the brownies into little pie slices like I did.   For the caramels, You can either make your own  or melt some in a sauce pan then mix in some chopped pecans. To finish , top off each brownie with the warm caramel sauce! It’s that simple!

To Make Caramels
Ingredients
2 cups sugar
1/2 cup butter
2 cups  heavy whipping cream
3/4 cup light corn syrup
Directions
Butter the sides of a 8 or 9 inch glass baking dish.
 In heavy sauce pan heat all ingredients and boil on med. heat, Stirring constantly. Uncovered, cook about 30-35 minutes or until a small amount of the mixture forms a firm ball when dropped into a cold glass of water. If it hasn’t reached this stage yet, keep heating and test again in five minutes.
Immediately spread mixture in the baking dish and cool completely. It takes anywhere from an hour to 3 hours.  Cut them into 1 inch squares.
Since I didn’t want to make caramels I just went ahead and mixed the caramel into a bowl with chopped pecans. After letting it cool just a tad I went and did this- 
Talk about being smothered…I don’t think the brownie minds though, and to tell you the truth neither do I! 🙂
Make the brownies happy, give them warm caramel with pecans! You won’t be sorry!
