Recipe Challenge: Day 3 – No Bake Granola Bites

I’m always on the look out for different recipes for granola bars, or energy bars to make for my kids. They easily go through them faster than I can make them. This recipe I found through Pinterest, a No-Bake granola bite that the kids would love! Super easy to do, and you can switch it up however you like! You can find the original post here .  Since you can pretty much sub the ingredients, you can change the taste to what you’d like on any given day.   Here is what I put together

These were made with sliced almonds, dried cranberries and added wheat germ. I left the chocolate out completely.  I think if you are a huge fan of nuts, adding crush nuts would add a great crunch to it. even pecans. It’s a switch it up kind of recipe so you really can’t lose.

No-Bake Granola Bites

Ingredients

1 cup oatmeal
1/2 cup peanut butter
1/3 cup honey
1 cup coconut flakes
1/2 cup ground flaxseed
1/2 cup of either dried fruit or mini chocolate chips.
1 tsp vanilla

Mix everything  in a bowl and let chill for about half an hour. After the mix is chilled, simply roll into small balls and store in the fridge in an airtight container. Simple as that!
