Recipe Challenge: Day 5 – Bob Evans’ Game Day Celebrations!

Did you watch the Superbowl?!  Congrats to the Giants!

We had an amazing day even though half of us were sick here. Boo, but  we still enjoyed today!

I was up early starting to cook for the party.  Thanks to  Bob Evans’ for supplying the recipes , slow cooker , bowls and both the Zesty and Original Roll Sausage(s) to help kick off my party today!

Made several things today, the new recipe that fell into the Challenge was some Football Party Dip!

I kept this in the slow cooker that was supplied to me for hosting today’s party 🙂 It was warm, spicy and oh so good! I think we put bread in it more than chips. Fine by me! This was made with the Zesty Hot Sausage Roll, love the spice to it!
Ingredients
1 pound Bob Evans Zesty Hot Sausage Roll
1 cup Bob Evans Wildfire Barbecue Sauce
1 can baked beans (16 oz)
1 3/4 cups fresh diced tomatoes*
1 cups diced celery
1 cups diced onions
1 1/4 teaspoon garlic powder
3 dashes hot sauce to taste
Salt & Pepper to taste
Garnish Option
1 cup shredded cheddar cheese
1/3 cup sour cream
1 bag tortilla chips

1/4 cup green diced onions

Drain excess liquid from tomatoes for thicker dip.
Directions
Crumble and cook sausage in a large skillet or soup pot, over medium-high heat until browned. Drain
sausage. Add celery and onions to sausage and continue to cook over medium heat until vegetables are
slightly tender and sausage is no longer pink. Add baked beans, barbecue sauce and mix well. Add tomatoes,garlic powder, hot sauce, salt and pepper to mixture. Simmer together for 5 to 10 minutes and serve in a large bowl. Garnish with cheddar cheese, sour cream and diced green onions on top, if desired. Serve with tortilla chips. Refrigerate leftovers. I kept it warm in the slow cooker all during the game.

Not to be left out, my fire roasted spicy chili 🙂 I couldn’t help myself and got into it even before game time today. There’s just no way I can resist the urge to dunk bread in chili and gobble it up.
I made my chili with the  Bob Evans Original Roll Sausage, and it really came out great!

Another awesome Bob Evans’ Game day Recipe 
I never got around to making this, but it’s on my “must make soon” list!

7-Layer Taco Dip

Ingredients

1 pound Bob Evans Original Recipe Sausage Roll
1 can refried beans (16 oz)
1 package taco seasoning mix (1.25 oz)
2 cups shredded Mexican cheese blend (8 oz)
1 container sour cream (16 oz)
1 can chopped green chilies (4.5 oz)
1 large tomato, diced
1 can sliced black olives (6 oz)
1 bunch green onions, chopped
1 jar salsa (11 oz)
1 bag Tortilla chips

Directions

In large skillet over medium heat, crumble and cook sausage until browned. Stir in beans, chilies and
taco seasoning mix. Spread sausage mix into 7 x 11 inch serving dish. Top with sour cream and salsa.
Sprinkle olives, tomato and onion on top. Cover with cheese. Serve immediately with chips. Refrigerate
leftovers.
