Sweet Treat Friday – Berry Cherry Crisp

 This is such an easy healthy treat to put together for the family. Bursting with flavor you can’t go wrong with it.

You can mix up the fruits to make it different every time. Pictured are ones I made with blueberries, blackberries and cherries.

Ingredients for Berry Cherry Crisp

2 cups fresh or frozen blueberries
2 cups frozen pitted tart red cherries
4 tablespoons flour
1 tablespoon honey
2 tablespoons flaxseeds, toasted
1/2 cup rolled oats
1/3 cup chopped walnuts (I used almonds)
2 tablespoons brown sugar
2 tablespoons oil

Directions

Thaw the fruit if using frozen, but do not drain. Preheat oven to 375F.
 In a medium sized bowl, combine the fruit, 2 tablespoons of the flour and the honey. Divide the mixture among 8  six ounce ramekins or custard cups. Place toasted flaxseed in a grinder to make it into a fine powder. IN a medium sized bowl, put ground flaxseeds, oats, walnuts, and remaining flour, brown sugar and oil. Mix it up and then sprinkle over the fruit mixture cups.
Bake 15-20 minutes or until the top is golden brown or fruit begins to get bubbly.

*Toasting the flaxseeds just place in a skillet and heat until they start to pop.

Enjoy as a dessert, or afternoon snack!
