Unstuffed Cabbage

If you missed my Review on The Whole Foods Kosher Kitchen , Glorious Meals Pure & Simple by Lévana Kirschenbaum, you can head over here and read it. I am revisited the cookbook because there’s just so many wonderful recipes in it and know many of you are already thinking about picking this up.

This Unstuffed Cabbage recipe is fun, because as Lévana states in the book her “Stuffed Cabbage” had come completely undone in the pot as it cooked. She was mortified at the mess but the meal was delicious despite of it. We love Stuffed Cabbage in this house and this seemed like a perfect recipe to try out. With the taste of the apples as well as cranberry juice in it, it brought a whole new change to what I normally cook. I truly brought out flavors.  Don’t think I’ll go back to cooking stuffed cabbage without added apples in it either. My kids also adored this recipe, they all thought it was sloppy joe’s because that’s pretty much how it looks. I served it with homemade bread and they all gave it the thumbs up!

Unstuffed Cabbage


1/4 cup olive oil
1 large onion, quartered
4 ribs of celery, peeled
2 Granny Smith apples, unpeeled and quartered
1 large bunch of dill, fronds and stems
3 pounds lean ground beef or turkey
1 large head of white cabbage, center cores discarded. Sliced very thin
1 cup golden or black raisins
2 cups short grain brown rice
6 cups canned crushed tomatoes
6 cups cranberry or pomegranate juice
1/4 cup tomato paste
2 tablespoons cinnamon
2 tablespoons paprika
4-5 bay leaves or 1 teaspoon ground
Salt, just a drop if at all, and pepper to your liking.


Heat the oil in a wide bottom pot. In a food processor coarsely grind the onions, celery, apples and dill. Add the ground mixture to the pot and saute until translucent. Add the meat and saute a few more minutes. Add all remaining ingredients and bring to a boil. Reduce to medium low and cook covered for about 1 1/2 hours, stirring occasionally to avoid scorching. Cook until the cabbage and the rice are very tender and the liquid is nice and thick. Serve hot.

 You don’t want to miss out on this Cookbook, I am finding myself using it more than any other cookbook in my house right now. It’s got wonderful suggestions for alternate ingredients, several variations to change things up.     Do you think you could use dry dill?
    This sounds so yummy. I have never tried stuffed cabbage although it sounds wonderful. Putting this on our menu plan this week or next as it looks gluten free and so easy to make. Thank you!
