Frozen Lemonade Squares


Super easy summer treat for the whole family! No baking required you mix this together and freeze it. Before you know it the pan will be empty and everyone will be wanting more. The next time I make this think it'll be with strawberries or even raspberries! The original recipe used two cups of sugar, which I cut in half. There's really no need for all of it and it came out perfect.


Ingredients
1 cup graham crackers crumbs
1 cup sugar
2 tablespoons butter
2 cups plain nonfat yogurt
1/3 cup lemon juice
Zest of one lemon
1/2 teaspoon lemon extract
1 cup lite whipped topping

Directions
Grease or spray a 8x8 baking pan
 In a medium bowl mix together the graham crackers and butter. Press the mixture evenly into the bottom of the greased pan . In a large bowl whisk together the yogurt, and 1 cup sugar, lemon juice, zest, and extract. Combine it will then fold carefully the whipped topping. Pour the mixture onto the pressed crust then cover and freeze for about 4 hours.

It will cut better if you run a knife under some warm water.

OMG I just made some easy cheesecake the other day and it so like this recipe except less lemon! LOL It so nice of a treat on a hot day... I almost put some strawberries in the mix too...
