Winter Lettuce

It may be winter, but the garden is still going. We have plenty of winter lettuce and greens growing strong this year. I can't really plant more or tend to the garden while I am recovering but I can pick what needs to be harvest with the kids help!

We've been enjoying some small patches of lettuce which you can plant in rotations like I've mentioned before . If you plant every ten or so days starting in the end of summer and into fall you can have an endless supply of greens.

 Most are winter hardy but you need to check your zones to make sure they can stand the bitter cold. If they aren't frost hardy and most need at least some coverage check into a garden cover. They let the sun light in but keep the frost at bay.

Sofia The First

The Sofia The First character will make her Disney Parks debut in the 29th Annual "Disney Parks Christmas Day Parade" airing nationwide on Christmas Day, TUESDAY, DECEMBER 25 (10:00 a.m.-12:00 p.m., ET; check local listings) on the ABC Television Network.  It was also recently announced that Sofia will be joining the Disney Junior – Live on Stage! show at Disney's Hollywood Studios and Disney California Adventure in early 2013!

Sore Throat? Make some Jelly! - Recipe

With cold weather surrounding us and colds knocking at our doors we need to be prepared for all those sniffles and coughs. Colds are colds, they happen to us all and you just have to ride them out. There's no magical medicine that would knock a cold right out of you, your body just needs to go through it. There are however things you can do right in your own home to help aid and sooth colds, coughs and sore throats. One thing I have found over the years is a simple syrup or jelly that you should always have on hand. It's made with honey, ginger and lemons.

Honey is a go to ingredient in this house when it comes to sore throats, it has always helped. The kids however do not like taking honey in anyway, which is why I'm sharing this quick easy home recipe. When you mix the honey , lemons and ginger together let it sit it forms a jelly. Something you can either add to your tea, or just warm water, or any drink really as well as add to toast. The kids take this easier and it does help with their sore throats.


Cut up a lemon into slices. Set the slices and sliced ginger into the jar. Pour honey (local and organic are best!) into the jar over the slices. Cover and let sit in the fridge. It will make a jelly and you can keep it up to about 3 months.

Unilever Spreads- Review & Giveaway

Cookies , cookies and more cookies! Tis the season to bake isn't it? 
 This season I tried out some new baking products with the help of Unilever Spreads.
The challenge, bake with them and compare to other butters, to see which comes out on top! I was given a great baking start too. 

As someone who bakes a lot, I don't often use any spreads, why? Well because I don't normally get the right outcome I want in the baked goods, so this was an interesting fun challenge for me. Unilever Spreads, include a wide variety of soft spreads, including Country Crock, I Can’t Believe It’s Not Butter!, Promise, Brummel & Brown, and Imperial . Some quick facts about Unilever Spreads -

· Have 0g trans fat per serving
· Contain no partially hydrogenated oils
· Have no cholesterol
· Are 70% less fat than butter per serving
· Have 30% fewer calories than butter per serving
All good facts when you think about just how many baked goods you end up making during the holiday season. This way you can cut down some of that unwanted fat and still enjoy the great taste!

I used I can't believe it's not butter for cookie baking this year. I normally use stalked stick butter, but went all out to try out the different butters. Sugar cookies were just a little harder to work with but they came out perfect with adjustment to flour. Some cookies need to be chilled due to the softer spreads, but besides that and the flour adjustment in a few it was the only thing I noticed different. They all baked up nicely !
 The rest of the cookies , which are below came out just great, and no adjustment was needed so this was a great baking challenge. Many thanks to Unilever Spreads for the chance to put their products to the test. My neighbors and friends equally thank you for their chance in taste testing the results! Beef Stew

With cold and stormy weather all I wanted was stew! One of my favorites is Beef Stew, and I never seem to make it the same way. Sometimes I make dumplings, just as if it were chicken and dumplings  Other times I make it like gumbo, thick chunky and so forth. Other times it's more of a soup where you must have bread to eat it with. Other times, like this one recipe, it's made with rice.
What can I say, I like mixing it up one day to another!

You can easily do this in the slow cooker, but I prefer slow cooking on the stove most the time. 

2lbs of cubed beef
1/2 cup flour
olive oil for pan
3 ribs of celery chopped
1/2lb carrot hopped
1 large onion chopped
5 garlic gloves minced
1/2 lb of baby red potatoes cut and quartered
2 cups beef stock + more if needed later on
bay leaf
2-3 springs fresh parsley
2 springs fresh thyme
1 cup chopped mixed peppers

Toss meat in flour and pepper. Heat oil in large pot and brown meat on all sides. Remove the meat, add a little more oil and scrap anything off the bottom of the pan, keeping it all in the pan, you just want to loosen it. Throw in your vegetables and meat back in sprinkle with some more pepper and poor in beef broth. You want to cover the meat and vegetables so of the broth isn't enough to cover it add in some water until everything is covered with a good half inch left. It will cook down. Stir and cook till pot boils and set it down to low and cover gently for 2- 3 and a half hours. Keep going back to stir it once in awhile. If you want rice add a cup of uncooked rice in the last hour, it will be ice and cooked by the time you want to eat!

Wellness Dog Treats Review

 We recently tried out the Wellness Wellbars , Crunchy Peanuts and Honey bite sized dog treats. My dogs gobbled them up so fast it was hard to snap a picture of them enjoying them! Oven baked they are bite sized and perfect for smaller dogs. All the bars are wheat free and baked in the oven for perfect crunch! I can’t tell you how they tasted, but the dogs enjoyed them. I like the package, sealed in plastic  to keep them super fresh I didn’t open the bag to already cracked or broken pieces like I normally do with treats.
The Wellness Bites, are  small soft dog  treats, made with Turkey and Duck. All the soft treats on the line are made with either meat, veggies or fruit.  Let’s just say Baby and Spot when bonkers over these treats. Packed in a resalable pouch it keeps them soft, though I must say my kids opened the bag and left it open for days without the treats going hard.  I think that’s a plus considering I don’t want to feed my dog stale treats. Safety Tips for the Holidays from Radio Disney and Underwriters Laboratories

Happy Holidays everyone! We're all busy this time of her, more so then other's but it's no time to forget being Safe! Radio Disney and Underwriters Laboratories put together some quick and easy safety tips you need to remember this season!  

  •  Water your tree daily.
  • Blow out unattended candles.
  • Always make sure your holiday lights and decorations bear the UL Mark of Safety.

Additional tips include:
1.       Only plug in one plug per outlet
2.       When online shopping, be aware of what personal information you are providing
3.       Always log off a website before you close your browser
4.       Stay at least 3 feet away from portable heaters
5.       Keep stairways and pathways free of clutter
6.       Remind your kids to dial in 9-1-1 in emergencies
7.       Make sure your home has a UL listed Carbon Monoxide alarm, UL listed Fire Extinguishers and a home escape plan

Storm attack!

We have been flooded, literally by storms this week. We lost power last night and this morning, heavy winds, heavy downpours and our yard and street were flooded. With more rain in the future the creeks and rivers have swelled but we have had a break in the storm this afternoon.

  The sun came out before the clouds started coming back in. 
More rain to come our way but glad for the parting skies!

Mohawk Home Rug Review & Giveaway

My Mohawk rug was styling, I picked the wine reserve one. You know how I adore wine so this was a welcome addition to my kitchen. This was great, cushioned nice to stand on and an important fact- You can wipe spills off easily from the surface. *Do not get the foam wet it will tear and rip apart.

It doesn't slip on the ground, you don't slip on it even when wet, easy to clean and keeps it's color after great amount of usage.
