Sweet Treat Friday – Chocolate Silk Pie

Chocolate, creamy chocolate and whipped cream . That’s heaven right there ! It’s easy to make as well a wonderful friend gave me this recipe. Using a pre-made crumb crust you also save a little bit of time as well.
Ingredients for the Filling-
 3/4 cups sugar
1/4 cup unsweetened cocoa
3 tablespoons cornstarch
1/8 teaspoons salt
2 cups low fat milk
1 egg beaten
1 1/2 ounces semisweet chocolate grated
1 teaspoon vanilla
Homemade Whipped Topping Recipe below
Combine the sugar, cocoa, cornstarch, salt and milk in medium saucepan. Stir well with a fork or whisk. Cooking while stirring constantly until mixture comes to a boil.  In a separate bowl beat the egg. Slowly add about 1/3 cup of the milk mixture into the egg, then mix. Add it into the cooking mixture and keep stirring. Cook about two minutes or until the mixture starts to thicken. Remove from heat and add in grated chocolate , keep stirring so the chocolate melts. Stir in Vanilla. Mixture should be thick. Spoon mixture into the prepared crust and set in fridge for at least two hours or until completely cool and set.
Whipped Topping Recipe-

A drop or two of vanilla

Whip all ingredients together until you have soft peaks.  Chill in fridge and then take both Chocolate pie out and top with whipped topping. You can use how ever much you like. Keep both chilled though. Top with crushed cookies or even more chocolate pieces.
