Lunch Box Challenge Day 12: Grilled Tri-Tip Sandwich Wrap

I love using left overs for lunches for another meal.  A lot of times it even tastes better the next day so it becomes a really good deal. With a family of six and four hungry kids we also can’t afford to waste those leftovers. Believe it or not the things I come up with using left overs win the kids over most the time more than the dinner it had been to start with. Kids tend to be funny that way.

For the Tri-Tip

2-3 lb trip tip beef roast
1/4 cup soy sauce
1/4 cup olive oil
2 tablespoons water
2 cloves garlic peeled and chopped
ground pepper to taste

Mix all the ingredients into a measuring cup. Place meat into a zip lock bag and pour mixture in over the meat. Mix up and make sure it’s covered then let it sit for a couple hours. When you are ready to grill take meat out of the bag and grill for a about 30 minutes, 15 on each side or until the meat is cooked to desired temp is reached. We cook most beef to about 135 which is medium rare.

Save any leftovers for the wrap

Directions and ingredients for Steak Wrap

1/2 cup low-fat plain Greek yogurt 
1/2 cup grated Parmesan cheese
 Coarse salt 2 
 sandwich wraps of choice 
 4 teaspoons Dijon mustard 
 reserved cooked steak, thinly sliced 
1/2 onions sliced ( I had chopped)
 Tomato slices 
Lettuce

In  a small bowl, stir together yogurt and Parmesan. Season with salt. Spread yogurt mixture over half one part of the middle of the wrap. Spread mustard on other half then layer lettuce, onions tomato, steak and a little more lettuce before rolling up.  Either fold for one wrap or roll and cut into two pieces  Depends on the size of the wrap you have even kind. 

I served this with carrots, apples and baked granola bars. 

Today’s Lunch Box Tip:  If you use leftovers for lunches, make sure things are clearly labeled so you know when it was made, what’s in each container. Make it a habit to use up any and all leftovers so you aren’t wasting it. You’ll actaully start to see how much fun it can be find new ways to use up last nights dinner!
