Lunch Box Challenge Day 15: Handheld Salad

Salads are easy to make, but they also tend to get boring after awhile. My kids love a salad but at times they say it’s too plain, too boring same old. You get the idea, and I don’t blame them. In hopes of keeping the kids interested in salads I’ve made it more interesting- turning the salad into a sandwich.  Who say’s salads must be in a bowl anyways? You pile so much into them to start with it’s like a sandwich just without bread!

Caesar Salad Pita

What you need
Pita
Choice Lettuce
Cubed baked Chicken pieces, ( or shredded, sliced whichever)
Parmesan cheese
Caesar Dressing
You can add carrots, tomatoes, or other items that the kids like. I kept it simple but know the kids will add the green beans in and possibly the pineapple. They like mixing it up and you should encourage the kids to help pick out items they’d like to build their lunch with.

This is an easy assembly just put it all together and side with dressing.

Today’s Lunch Box Tip: Empower the kids with choice. Keeping a variety of foods in their lunch gives them a choice of what to pick and eat. Try creating an “assemble yourself lunch.” They can put it together themselves either at home or at school. Let them be creative, and be ok with what it is they choose. Such a simple thing of being able to choose themselves gives kids a huge boost of self confidence and accomplishment when you approve it! That choice you give them , Leads to success in school and in life.
