Halloween Challenge Day 4: Roasted Pumpkin Seeds

I’ve had to change a bit to this challenge due to how busy things have gotten around here.
 There’s a lot going on and I’ll try to keep up, but today is a quick easy snack recipe for you to enjoy ! My kids love Roasted Sunflower and Pumpkin seeds, it makes a great snack, and you can add them into a lot of things:  Salads, trail mix, homemade granola bars, even a bowl of popcorn is spruced up with pumpkin seeds.

What you need

Water
Pumpkin
Sea salt
Cookie sheet

Directions. Gut the pumpkin. You want to get all the guts out and try to get the pulp off the seeds.  ( should be about 3 1/2 cups of seeds when finished)
Place what you have into a large bowl running under the water to rinse as much pulp off as possible.  Remove as much as you can then place it all into a large pot of water.  Most the pulp will sink to the bottom seeds should float.
Drain them in a strainer or colander then place in large bowl with warm water and 1/3 cup of sea salt. Let this soak for about an hour or two then drain.
Preheat the oven to 350 and spread the seeds out onto a cookie sheet. Sprinkle the seeds lightly with more sea salt . Bake for about 25 minutes. stir them rotate the pan so they cook evenly. Bake until they are dried, you don’t want them to be brown but dry and white. Let them cool off and store in an air tight container.

    Mmmmmmm I love toasted pumpkin seeds!! I didn't carve pumpkins last year because my daughter doesn't live with us anymore, but I think I will this yea so I can have seeds.

    I have never tried roasted pumpkin seeds but I am a big fan of walnuts and other kinds of nuts so I would love to try these. They sound like a great snack during the fall and winter months, especially right out of the oven and warm.

    I have been hesitant to try pumpkin recipes where I actually have to do a lot of work with a real pumpkin instead of just a can. However, I think I could maybe handle this! I'm kind of surprised at how many seeds are in there. 3.5 cups is a lot. That really gives you a lot of bang for your buck!

    This is a fast, easy idea for a healthy snack. I often bake with pumpkin seeds and sprinkle (shelled) seeds across the tops of muffins and other baked goods, but I never eat them on their own; this post has inspired me to do so. I could also imagine that roasting them and serving them warm with apple cider and some pumpkin-flavored goodies would be a hit with guests this fall!

    We roast pumpkin seeds every year. My Hubs asks for them believe it or not. I haven't gotten our pumpkins yet or I would be roasting away. I have never roasted sunflower seeds.

    We don't celebrate Halloween around here, but I LOVE pumpkin seeds when they're roasted. My grandma used to roast them in her oven when I was a kid and was going to her for a few months during the summer holidays. What fun times!
