Crock-Pot Recipe Challenge Day 20: Roast Chicken

A slow cooker is the perfect way to cook a whole chicken. I love that it always comes out moist, and you can toss in vegetables with it to have a complete meal cooking all day long. The most work you do is shake seasoning over the roast and bam- Dinner is served.

Ingredients

1 whole chicken 5-6lbs
Poultry seasoning
2 cups baby carrots
about 10 baby small red potatoes quartered
1/2 cup chopped celery
2 tablespoons butter
1/4 cup water

Directions place your vegetables in the bottom of the slow cooker. Place chicken breast side up on top of the vegetables. Please remove the innards( neck, heart gizzards)  . Place these in a pan on the stove and cover with water. Season your chicken with poultry seasoning and place the butter in the slow cooker. Cover and cook for about 6-7 hours on med ( longer for slow, shorter time for high)

To make gravy boil the gizzards in the pan on the stove. Thicken with either corn starch or flour . Turn down to a simmer and keep whisking till it’s thick, if it’s still runny thicken with more flour.

You can cook a large turkey breast this same way and it always comes out perfect!
