Crock-Pot Recipe Challenge Day 3: Creamy Butternut Squash Soup

Great way to use up some squash from the garden is to make some warm and creamy soup!

 This is another easy recipe which you can make and impress the guests. Looks like hard work when really the most you did was smash the squash. Such hard back breaking work I know but-  you can do it!
Grab the crock pot, grab the potato masher and get ready to delight yourselves in some homemade soup.

Ingredients

2 lbs Butternut Squash that have been peeled and cubed
1 Small Peeled Chopped Onion
1 Apple peeled and cubed
2 cups of chicken Broth
1/4 Teaspoon Pepper
1/4 Teaspoon Nutmeg
1/4 Teaspoon Cloves
1/4 Teaspoon Cinnamon
1/4 Teaspoon Allspice
1/4 Teaspoon Salt
1 8 Ounce Package of Cream Cheese
Paprika

Instructions

Combine all ingredients except for the cream cheese and paprika into the slow cooker. Cover and cook on low for about 6 hours .  You should be able to mash the heck out of the squash now. Go to town with it and squash it all up with a potato masher. Use it as a stress reliever! After you’ve had your therapy session cut up the cream cheese to place into the pot. Cook again on low for 30-40 minutes. Check the taste adding a sprinkle of salt or pepper to taste.
Soup is served! Serve with some nice warm bread or rolls and garnish with some toasted pecans for a little extra something.
