Recipe Challenge Day 1 : Crispy Baked Chicken Wings

Welcome to the  Annual Recipe Challenge! This one is the best of all ( well to me anyways) This is what started the blog to begin with. A place to keep my recipes in a safe place, and share with people I know. This is the fourth year I’ve been doing this Challenge. The idea if you haven’t  followed the other challenges are simple- Try a brand new recipe each and every day for an entire month.

 The most recent ones in the last few years I’ve thrown have been in, Lunch Box Challenge, Vegetable Challenge and the Slow Cooker . This one those is a lot of fun as it’s a free for all.

 How’d is start? Simple, my kids complained too much about foods I made ( yeah go figure)  and I got tired of them complaining. Came up with the idea to try new foods, with no debate, no arguing it was a must. The kids were to try a new food, a new recipe and tell me what they thought. The entire purpose? To get them to realize new foods can be fun and interesting. Everyone got into it and it’s become a tradition. So here we are year four of blogging ( yay!) and day one of the challenge. Today’s Recipes, hello Chicken Wings!? It’s Superbowl Sunday tomorrow, never will I pass up a chance to make wings. I’ve only ever made chicken wings by dumping an entire bottle of hot sauce all over chicken and shoving it into the oven. Simple and effective, so this year I am tossing the bottle – Ok most of it. I can’t just toss the whole thing-  Don’t judge me and my hot sauce obsession! This recipe has two sauces to try out, Buffalo *drool* and Ginger Soy.

Crispy Chicken Wings

Ingredients

 Buffalo Sauce
1 tablespoon unsalted butter, melted
1/4 teaspoon cayenne pepper
1/4 teaspoon freshly ground black pepper
1/4 teaspoon kosher salt
1/4 cup  your favorite hot pepper sauce

Ginger Soy Sauce
1/4 cup honey
2 tablespoons soy sauce
3 large garlic cloves, crushed
1   2 x 1 piece of ginger, peeled, sliced

Wings

5 pounds chicken wings and drumsticks
2 tablespoons vegetable oil
1 tablespoon kosher salt
1/2 teaspoon freshly ground black pepper

Directions

Buffalo Sauce

Mix first 4 ingredients in a medium bowl; let stand for 5 minutes. Whisk in hot sauce; keep warm.

Ginger Soy Sauce

Bring all ingredients and 1/4 cup water to a boil in a small saucepan, stirring to dissolve honey. Reduce heat to low; simmer, stirring occasionally, until reduced to 1/4 cup, 7–8 minutes. Strain into a medium bowl. Let sit for 15 minutes to thicken slightly.

Wings
Set the oven to 400

You need 3 large baking sheets.  Place all the wing ingredients in a large bowl; toss to coat. Divide wings between prepared 2 baking sheets and spread out in a single layer. Bake wings until cooked through and skin is crispy, 45–50 minutes.
Line the remaining baking sheet with foil; top with a wire rack. Add half of wings to ginger-soy glaze and toss to evenly coat. Place wings in a single layer on prepared rack and bake until glaze is glossy and lightly caramelized, 8–10 minutes.
Toss the other remaining half of wings in Buffalo sauce there is no need to bake these any further Serve immediately

The kids loved the Ginger Soy Sauce, I never got a lick of them so this is a win with the kids.  While they chomped down those, I may have possibly eating all the  Buffalo Sauce ones. 🙂 Again don’t judge me, no one stands between me and my hot wings.
