Recipe Challenge Day 13: Candied Sugared Pecans

My husband brought some brown sugared pecans once, a coworkers wife made them during the holidays and since then I’ve wanted to have more. I pretty much ate all the ones he brought home, in a day no less. They were that good. I’ve love to make a different mixture perhaps try tom Cheyenne pepper or some other interesting seasonings with this to see how it flavors. I didn’t have enough pecans so I used half pecans and half walnuts.

Ingredients

1 cup sugar
1 ½ tablespoon ground cinnamon
2 cups pecans – you can sub for other nuts you have, almonds or walnuts
1½ teaspoons vanilla
¼ cup water

Directions

Mix the sugar and cinnamon together. Put nuts and sugar mixture in a skillet , cast iron is best. Stir , then  combine the vanilla and water in a measuring cup. Add the liquid to glaze  mixture in the pan.
Place on medium high heat. The glaze will begin to turn into a thick liquid, boiling gently. Stir this mixture constantly until  the liquid evaporates and nuts are glazed. It’ll take about 10 minutes.  When it’s hard to stir the mixture is done.  Remove from the heat. Sprinkle with a little water, which will make the nuts steam and mix it up more. Place nuts onto a pan with parchment paper and spread out to cool completely.
