Recipe Challenge Day 17: Creamy Broccoli Shells

Came across this recipe through Pinterest. Saved it then lost the Pin, apparently I didn’t pin it just saved the recipe to my files . Not even sure what it was called, but if I find the original post I’ll update with a link.
 Nice and creamy this was an easy and quick meal to make for the family. I love that it is loaded with broccoli and I think cauliflower would work well too in this.

Ingredients

8 oz. pasta
1 large crown broccoli, wash it and cut it into smaller parts
1 onion
3 tablespoons butter
3 tablespoons  flour
2 1/2 cups milk
2 cups sharp cheddar, shredded
1/4 cup grated Parmesan
 salt and pepper to taste

Directions

Boil a large pot of water with a pinch of salt. When the water starts to boil add the pasta and let it cook for about 8 minutes. After 8 minutes add in the broccoli and cook until the pasta is done. Drain both in a colander .

While the pasta is cooking it would be a good idea to start the cheese sauce. Dice the onion and cook with butter over medium heat until softened. Add in the flour, with more butter and cook, you want to form a roux. Don’t let it burn, keep stiring this together. Using a whisk mix as you add in the milk in to create a nice smooth mixture. Add in the pepper and take to a simmer. It should start to thicken. Turn off the heat and add in the cheese, mixing till it’s all melted. Pepper and salt to taste before you add in the cooked and drained pasta with broccoli.

Seems like a lot to do but really it’s quick and easy to make.
