This is a really simple a quick recipe. I love stuffed mushrooms, adore them really and like trying new ones. This was given to me by a friend though her recipe has no cheese in it, I added it in there to half the batch to see how it came out. I liked them both, but have been cutting dairy out so ate most the ones without cheese.
1 lb white button mushrooms
10 ounces of any sausage
sprigs of Italian Parsley for garnish
mozzarella cheese shredded
Preheat oven to 350F
Clean the mushrooms then pat them dry . Make sure you pull the stems off. Chop them up leaving rough parts out. Scoop out the centers of the mushrooms. In a bowl mix in chopped mushrooms, sausage and meat from mushrooms together. Fill each cap with the mixture.
Arrange the mushrooms in a shallow baking dish or a baking pan lined with foil. If using cheese sprinkle each with just a pinch of cheese to cover the tops. Bake 35-45 or until the sausage is cooked.
Garnish with fresh parsley
