Recipe Challenge Day 9: Gluten Free Creamy Tomato & Spinach Penne

This recipe won the entire family over. It’s so easy to make and will be a fixture in the house. I used Gluten free pasta but you can use regular if you want. I think instead of cream cheese I’ll just use heavy cream next time see how it comes out but everyone loved this .

1 Tbsp olive oil
1 small onion diced
2 cloves garlic minced
3 tomatoes diced into cubes
1/2 tsp dried oregano
1/2 tsp dried basil
2 Tbsp tomato paste
2 oz. cream cheese
1/4 cup grated Parmesan
1 box penne pasta
9oz  bag fresh spinach


Bring a large pot of water to a boil over high heat. Add the pasta and cook until tender then drain.
While the pasta is cooking cook the onion and garlic in a large skillet with the olive oil. Cook until the onion is clear. Add in the tomatoes with the juice, and the seasonings. Stir till combined. Add in the tomato paste and 1/2 of water. Mix well , should look soupy. Turn the heat down, cut the cheese into cubes and add into the mixture. Mix until the cheese has melted and the sauce is creamy. Next add in the Parmesan to the skillet and stir again. Add in the rest of the cheese, stir till melted. Add in the spinach and gently stir for about 5 minutes or until the spinach has wilted. Add the cooked pasta into the mixture and stir.
Taste and add more pepper if needed. Serve warm
