Apple Pie Bars

I’m on a “raw bar”fix. Any granola, or energy bar you name it- I’m trying them all out and making up some new ones.
 Some of my kids are in sports, so we need that quick healthy snack that can replenish their energy after or give them plenty before hand. Not only that, my husband is diabetic and he likes to snack on things. With healthy snack bars laying around he doesn’t have to worry about spiking sugars when he enjoys them. If that’s not enough to get me to make tons of these bars, it falls on my shoulders as being a Mom. Let’s face it we need run hectic lives being parents, and we sometimes don’t get the time to stop- with these bars on hand you can snack and go!

These Apple Bars, are easy and quick to make, my kids really like them so I have to make two pans and hide some for myself or I’ll never get a taste. You will need a food processor.

Ingredients

1½ cups walnuts
1 cup dried apples
1 cup Medjool dates
¼ tsp. cinnamon

Instructions

In a food processor, combine all the ingredients and chop them until a paste is formed. It will only take about a minute. Transform to a 8×8 pan lined with waxed paper. Press mixture all down flat evenly. Refrigerate for 2 hours until set. Cut into small squares, or bars , you can even roll the small squares into balls if you’d like.

The dried fruit sometimes goes over a cup, depends on if I’m using up the last of either apples or dates. When I use more than a cup sometimes the dough is so thick it needs a little applesauce to form easier. If you find it too thick simply add applesauce by a tablespoon at first, mix see if you can form it better. Should not be more than 2 tablespoons or else it will fall apart easier and be way too sticky. Always keep in airtight container in fridge.
