Roasted Red Pepper Hummus

This is so easy, I can’t believe I haven’t made hummus before. You can play with the flavors as well, make it hotter if you wish or more mild. This uses a food processor, yes I am obsessed with it!

16 ounces chickpeas
6 ounces roasted red bell peppers
1 jalapeno, seeded, diced
1 tablespoon minced garlic
3 tablespoons chopped cilantro leaves
1 teaspoon paprika
4 tablespoons chopped onion
1 teaspoon freshly cracked black pepper
1/4 cup extra-virgin olive oil

Toasted pita bread, for serving

Mix all ingredients except the oil for now in food processor until pureed. Once pureed then slowly add in olive oil till mixed. Set in the fridge for about an hour before serving with the pita bread.

It’s as easy as that!

I so need to make this for my husband. He loves dips and chips and this looks like it is right up his alley. Thanks for such a great recipe.

I recently ordered pita chips and it came with a dip. I couldn't put my finger on it, but now that I saw this recipe, it seems like it was a hummus dip. This would be a great recipe to try to make on my own.

I have never made hummus at home, only tried it couple of times in a restaurant. I had no idea it's so easy to make. Thanks for the recipe.
