Roasted Red Pepper Hummus

This is so easy, I can’t believe I haven’t made hummus before. You can play with the flavors as well, make it hotter if you wish or more mild. This uses a food processor, yes I am obsessed with it!

Ingredients

16 ounces chickpeas
6 ounces roasted red bell peppers
1 jalapeno, seeded, diced
1 tablespoon minced garlic
3 tablespoons chopped cilantro leaves
1 teaspoon paprika
4 tablespoons chopped onion
1 teaspoon freshly cracked black pepper
1/4 cup extra-virgin olive oil

Toasted pita bread, for serving

Directions
Mix all ingredients except the oil for now in food processor until pureed. Once pureed then slowly add in olive oil till mixed. Set in the fridge for about an hour before serving with the pita bread.

It’s as easy as that!
