This recipe called for sausage meat but I changed it to Tofu. You can sub out the tofu and use about a pound of hamburger, or sausage, even ground turkey if you like. You use a food processor to make the tofu into a crumb mixture so chop up whatever meat you do use.
4 medium zucchinis, cut in half lengthwise
1/2 cup mild salsa of choice
1 packaged tofu, either processed in a food processor or break it up so it resembles crumbs.
1 tsp garlic powder
1 tsp cumin
1 tsp chili powder
1 tsp paprika
1/2 tsp oregano
1/2 small onion, minced
1/2 bell peppers chopped ( red and green work but whatever is on hand will do)
4 oz can tomato sauce
1/2 cup Mexican blend shredded cheese * I had non so used Mozzarella works fine
1/4 cup chopped scallions or cilantro, for topping
Pepper to taste
* if using any meat, I’d think half a pound of chopped up meat is more than enough
Bring a large pot of salted water to boil. Preheat oven to 400°F. Place 1/4 cup of salsa in the bottom of a large baking dish.
Using a small spoon hollow out the center of the zucchini halves, leaving 1/4-inch thick shell on each half. Chop the scooped flesh of the zucchini in small pieces and set aside . Place the zucchini halves in boiling water and cook 1 minute. Remove from water and set aside.
Whether you are using tofu or meat you will add this to a skillet with the onion bell pepper, chopped zucchini and tomato sauce. Stir it and cover , cooking until the onions are tender or if using the meat is cooked through. Remove from heat and place your halved zucchini on a baking sheet. Start filling the zucchini with the mixture from the pan. Top each with shredded cheese and bake for about 25-35 minutes. Zucchini should be tender and cheese should be melted.
You can make these ahead of time just leave the cheese off until you are ready to bake them.
