Guacamole Tomato Cheese Sandwich

Quick and easy sandwich for a day when you want something different. I didn’t add any meat but you can add some if you like, it would taste amazing on sourdough bread but alas didn’t have any on hand.

My daughter stole half of this, it was tasty! 

2 slices of your favorite bread
 about 1/3 cup Guacamole ( you can check out  two of my Guacamole recipes here and here
5 fresh sprigs of cilantro
2 slices of tomato
2 slices of  cheese
1/3 cup of mixed greens

Toast your bread then spread the guacamole on each slice of bread .Sprinkle with the cilantro. Place your lettuce or greens on top of each side,  then layer your tomato,  cheese  and a little more of the guacamole on top before topping with the other bread. Cut and serve.

A quick refreshing sandwich that would go perfect with a great glass of lemonade 🙂

    That guacamole on there is something I haven't thought to do. Sandwiches sure have a lot of wonderful varieties, eh? 🙂 Thanks for sharing.


    Now this is a sandwich that would please my husband! He loves his guac on everything but we haven't tried it on a sandwich before. BRILLIANT!

    This looks like it would be delicious, healthy and filling. I love guacamole in moderation and have always loved a little of it added to sandwiches and of course on chips.
