: Chicken Milanese

This cooked quick, and with a light salad of greens and raw vegetables, dinner was done in less than 15 minutes . Yup. 15 minutes.

Ingredients
6 medium boneless, skinless chicken breasts
1 1/4 cup all-purpose flour
4 large eggs
2 1/2 cups Panko breadcrumbs
Olive oil
Salt and pepper to taste

Directions

Clean and dry the chicken set aside. place your eggs in a bowl, whisk them up set aside. Set your breadcrumbs in another bowl. Season the flour with salt and pepper set aside. . Here comes the fun, fun part. Beat the snot out of the chicken until about 1/4 inch thick.

Now coat the chicken with the flour, then dip into the egg, then into the bread crumbs . As you are doing this you want the oil to be heating, you want enough oil to just coat the bottom. As you finish breading, place chicken into he heated oil and cook. Turn when golden brown and repeat with all the other chicken. After cooking on both sides, place to a plate lined with paper towels it will soak up any extra oil. Serve with a light salad, and enjoy!
