Spaghetti Carbonara with Shrimp

This is a quick meal to throw together. If you don’t have shrimp, you can opt out or even toss in perhaps ham from last nights dinner, chicken even. It’ll taste really good!

Ingredients
  1. Cup of chopped asparagus
  2. Small pack of shrimp a little of a cup
  3. 4 slices Bacon
  4. 4 cloves Garlic
  5. 2 tbsp Parsley, fresh leaves
  6. 2 Eggs
  7. 8 oz Spaghetti
  8. 1 Kosher salt and freshly ground black pepper
  9. 3/4 cup Parmesan, grated
Instructions
  1. Bring a big pot of water to a boil, cook pasta according to package instructions, reserving 1/2 cup water and drain well.
  2. In a small bowl, whisk together eggs and Parmesan then set aside.
  3. Heat a large skillet over medium high heat. Add bacon and cook until brown and crispy, about 6-8 minutes; reserve excess fat, add in the Asparagus and stir for about 2 minutes,  Stir your Shrimp in and start cooking.
  4. Stir in garlic until fragrant, about 1 minute. Reduce heat to low, shrimp should nearly be cooked by now.
  5. Stir in pasta and egg mixture, and gently toss to combine, season with salt and pepper, to taste. Add reserved pasta water, one tablespoon at a time, until desired consistency is reached.
  6. Serve with fresh Parmesan.
