The other day we had eggplant Parmesan but I had way too much breaded eggplant that had been cooked so I decided to make a sandwich out of it. Just grabbed what was on hand really and it made a great lunch.
2 slices breaded baked eggplant ( peel eggplant, slice whichever way you want about a 1/4 inch thick. Dip into a beaten egg and then bread with crumbs, )
Any roll or bread you’d want to use,
small handful of small lettuce mixture
Green and red pepper slices
sandwich spread ( I used a basil garlic spread)
Large Mushroom slices ( or just use a couple small ones sliced
Directions, heat about a tablespoon butter in a skillet or indoor grill, let it melt and place eggplant in the center. They cook fast, you want to heat through about 3 minutes on each side. Once cooked, set aside put in your peppers and mushrooms, heat till grilled lightly Start assembling your sandwich. This is a great quick warm sandwich that will fill you up fast!
