Greek Yogurt Egg Salad

Eggs were never my thing growing up, but now I have them nearly everyday. Love trying different ways to enjoy them too and my new obsession is egg salad. Whether I eat it straight from the bowl or put it on toasted bread for a sandwich , I must get me some egg salad! This is yet another recipe that has so many different versions, my friend shared this one and it’s been my go too. If you have a favorite recipe for egg salad would love to hear about it!

 

Ingredients

8  hard boiled  eggs
2/3 cup plain Greek yogurt
1 tablespoon mayonnaise
1 teaspoon dried dill
Kosher salt and freshly ground black pepper, to taste
*optional hot sauce to taste
Directions

Hopefully you know how to hard boil an egg, if not- Place eggs in a large saucepan and cover with cold water by 1 inch. Bring to a boil and cook for 1 minute. Cover eggs with a tight-fitting lid and remove from heat; set aside for 8-10 minutes. Drain the water, and then cool the eggs before you even attempt to peel and dice.

Dice the eggs and mix with the listed ingredients above. I like chilling it before eating  with some arugula or any fresh lettuce on hand, warmed bread then a dash or two ( ok 7 dashes ) of hot sauce. Sometimes I add it right into the egg salad mix itself but my kids do not like hot sauce.
