Sugar Cookie Cake Bars

Sugar cookies usually are always a win in any situation. You get an easy recipe to follow with ingredients you already have on hand most likely,and it really doesn’t take a lot of effort or time to make – which means you can enjoy them even sooner. These soft cookies are a cross between cookie and cake, you get the same taste but with a little more soft dense bite, and top it off  with the classic white frosting you have a great treat for the whole family to enjoy.

While Everyone liked them , the next time these are made think I’ll use a bigger pan, possibly a jelly roll pan to thin them out even more- otherwise they are perfect little sweet morsels. It would be less cookie time of course so if you use a larger pan keep that in mind. On to the recipe!

Ingredients
  1. ½ cup butter softened
  2. 1 cup sugar
  3. 2 large eggs
  4. 1 teaspoon vanilla extract
  5. 2½ cups all purpose flour
  6. ¼ teaspoon baking soda
Instructions
  1. Preheat oven to 375 F. degrees. Grease a 9x13" pan.
  2. Cream the butter and sugar together , once creamed add in the eggs and vanilla. Mix until all combined then start adding the flour and baking soda. Mix until all incorporated.
  3. Take the dough and press the dough into greased pan, press dough down evenly throughout pan.
  4. Bake 15-20 minutes or until the edges are starting to turn a slight golden brown. Let the cookies cool completely before frosting.
  5. To make the frosting: combine all the ingredients & beat with an electric mixer until smooth. Spread over sugar cookie bars and add sprinkles if wanted . Cut into squares and serve .

  1. -Frosting Recipe -
  2. ½ cup butter softened
  3. ½ teaspoon vanilla extract
  4. 2 cups powdered sugar
  5. 2½ Tablespoons milk

You can add some flare with sprinkles! These would make a great treat for the school bake sale or even class party! One pan goes a long way. Cut a little over an inch give or take you can get nearly 40 from a pan. Hope you enjoy!
