Apple Fritter Cake

There’s been a lot of different versions of Apple Fritters, I can’t even remember the first place I had them as a kid, but I do know they all tasted like a donut mixed with Apple Pie. Warm, cinnamon and brown sugar, the soft sweet apples , and then the sticky fingers from the glaze! They were also very addicting with very little left overs if any at all.

  It’s been years since I had Apple Fritters so when this recipe passed by I had to snatch it to remember the good old days. The cake looked like it would be dense at first, the batter alone made me wonder if it would be any good. Fritters are usually fried like a quick donut which are usually light then let to cool before glazing, so the recipe had me interested from the get go. Rest assured while a cake, it had the same taste as the fried fitters and it was a tasty treat for my family.

The cake was very moist, had that nice sweet apple taste and warm spices throughout with an added crunch of walnuts ( I threw those in for a bonus) .While this isn’t the healthiest treat out there , it sure did bring back nice memories from when I was a kid. I hope you enjoy!

It makes a lot, the kids and I had this cake available for a good 4 days. Depending on how you cut it, how big your pieces you can get about 30 rich squares of servings, but if you cut bigger then you’ll get less.

Ingredients
  1. Filling Ingredients
  2. 2 cups chopped Granny Smith Apples (about 3 small, or 2 medium sized)
  3. ⅓ cup granulated sugar
  4. ½ tsp cinnamon
  5. pinch of nutmeg
  6. 2 Tbsp cornstarch
  7. 2 tsp water
  8. ½ cup dark brown sugar
  9. ½ tsp cinnamon
  10. Cake Ingredients
  11. ⅓ cup butter, room temperature
  12. ½ cup sugar
  13. ½ cup applesauce
  14. 1 tsp vanilla
  15. 2 eggs
  16. 2¼ cups flour
  17. 1 tsp baking powder
  18. 1 tsp baking soda
  19. ½ tsp salt
  20. 1 tsp cinnamon
  21. 1 cup Greek yogurt or sour cream
Instructions
  1. Directions
  2. For the Filling
  3. In a medium saucepan combine apples, granulated sugar, cinnamon, nutmeg, cornstarch and water. Heat over medium heat for about 45 minutes or until apples soften and a liquid thickens. Set aside to cool.
  4. Mix dark brown sugar and cinnamon in a small bowl and set aside.
  5. Cake Directions
  6. Preheat oven to 350° Spray a 9x13 pan with baking spray.
  7. In your mixing bowl beat butter and sugar, about 3 minutes until fluffy. Add applesauce, vanilla and eggs and mix on medium until combined.Add in the flour, baking powder, baking powder, salt and cinnamon mixing until well combined.
  8. Spread ½ the cake batter in the bottom of the prepared pan. Top with the apple mixture, spreading carefully to cover the batter. Then top with ⅔ of the brown sugar, sprinkling all over the apple mixture.
  9. Cover with the remaining batter and sprinkle the remaining ⅓ of the brown sugar all over the top. Bake 35-­40 minutes, or until the center of the cake is set. ( toothpick inserted comes out clean)
  10. Glaze Directions
  11. Prepare the glaze while the cake is baking by mixing the powdered sugar, milk and vanilla in a medium bowl. When cake is done, immediately poke holes in the cake using knife or the handle of a wooden spoon all over the cake. Pour the glaze over the top of the cake spreading to cover it completely and let the glaze set up for about 20 minutes before serving
