When life give you Apples ~ Apple Upside Down Cake

 

They’re funny amusing little things my children. It never fails when it comes to the last pieces of fruit, some child has a reason why they won’t eat it. Banana’s and apples are the two biggest fruits this happens to and over the last few years I’ve got on hand recipes to use up the last bits of fruit. Never needs too much and always gets rid of the fruit the kids deemed ” untouchable” . I find it rather amusing to ask why it is they don’t touch them, bruises being the top reason, or a funny color, or funny shape, once I was told the apple didn’t feel heavy enough – don’t ask I have no clue. No matter the reason, it’s always great to have go too recipes when you have only a few pieces of fruit left that will work in a pinch, and doesn’t take a lot of time to make. 

This Apple Upside Down Cake is a sure winner that uses only 2 apples. A nice tasty treat, with a nice sweet apple taste and a hint of cinnamon sugar throughout. 

The recipe is pretty basic, just like Pineapple Upside Down Cake, if you’ve ever made it there’s no magic to it and no super special steps . The beauty of this cake is not just the fun flipping it upside down when it’s done, but it’s really good fresh out of the oven. It’s easy and quick , not too sweet and very tasty. Hope you enjoy!

Ingredients
  1. Topping Ingredients
  2. 1/4 cup firmly packed brown sugar
  3. 2 tablespoons butter
  4. 2 large Granny Smith apples, peeled, cored, thinly sliced ( I used 3 small red apples and it came out great!)
  5. Cake
  6. 1 1/2 cups all-purpose flour
  7. 1 teaspoon baking powder
  8. 1/2 teaspoon salt
  9. 1/2 cup firmly packed brown sugar
  10. 1/3 cup butter, softened
  11. 1/2 teaspoon cinnamon
  12. 1 large egg
  13. 1 teaspoon vanilla
  14. 1/2 cup milk
Instructions
  1. Heat oven to 350°F. Grease 9-inch round cake pan; set aside.
  2. Place the butter into the cake pan you plan to use and place in oven until butter melts. Take it out and carefully spread the butter. Sprinkle the brown sugar over top and spread as best as you can. Arrange apple slices on top. Set aside.
  3. Combine flour, baking powder and salt in bowl. Set aside.
  4. Combine 2/3 cup brown sugar and 1/3 cup butter in another bowl. Beat at medium speed, scraping bowl often, until creamy. Add egg and vanilla; continue beating until smooth. Add flour mixture alternately with milk until well mixed.
  5. Spoon batter over apple layer; spread evenly. Bake 35-40 minutes or until toothpick inserted in center comes out clean. Cool 5 minutes; invert onto serving plate. Serve warm or cool.

    This recipe looks amazing! We used to have 5 apple trees at our old house and would make apple-everything! We don’t have apple trees anymore, but I bought a large box of apples at Costco and can’t wait to use them. I’m looking forward to trying this recipe.
