Puffed Quinoa Coconut Granola Bites

This is a great afternoon snack for the kids after school, or even a on the go energy snack. I make a ton of these and often mix up the flavors. You can add some crushed up nuts, any would taste good but my kids enjoy the walnuts better than anything else. 

Ingredients 

1 cup oatmeal
1/2 cup peanut butter
1/3 cup honey
1 cup shredded coconut 
1/2 cup Quinoa balls
1/2 cup dried cranberries
1 teaspoon vanilla 

Mix everything up in a large bowl and form into balls. I find it better to chill the mixture then use a cookie scoop to form the balls. Ones all rolled place in airtight container and chill again. Will keep up to 3 days in the fridge.
