Spiced Brown Sugar Salmon
Seafood was never my thing growing up, honestly I never even wanted to try it. Now we’re having seafood about two to three times a week if I can find the right stuff. Things change when you grow up, so does your outlook on things. Once I got over the , “eww that thing was swimming” It didn’t take long to realize I had missed several years on good food from the sea!
Salmon is one of our favorites , which is usually caught very fresh as a friend of my husbands goes fishing for it. Thankfully they cut it all up for us, cause I still don’t want to be the one slicing a big fat fish up on my counter.
Grace over at Blessed Elements, asked if there was another way to prepare Salmon, and there are TONS! All very simple as well, just by adding a few things you can have a new flavor. In a flash, I’ll toss dill, lemon and onion along with butter with Salmon steaks and cook it in the oven till it’s flaky. It’s quick, it’s fast, and your more than likely to have those things on hand. My husband likes to add chili pepper at times, along with other things to spice it up.

This is the quick simple Dill Lemon Salmon, I don’t have measurements, as I really just toss it together. If you don’t have fresh lemons , use lemon juice( two tablespoons to start with, depends on your tastes) All I really did was slice up a small onion , slice the lemon, place about 2 small cubes of butter (for each salmon steak), along with the slices of onions and lemon onto the salmon, then sprinkled with pepper and dill. This was cooked on the grill about 15 minutes.
Ginger Salmon
2 teaspoons olive oil
1 tablespoon honey
1 tablespoon Dijon mustard
2 teaspoons grated fresh ginger
1 pound salmon fillets
Directions
1.Preheat oven to 350 degrees F (175 degrees C).
2.In a small bowl, blend olive oil, honey, Dijon mustard and ginger
3.Brush salmon fillets evenly with the olive oil mixture. Place in a medium baking dish. Bake 15 to 20 minutes in the preheated oven, until the fish flakes easily with a fork.
Glaze
1/4 cup Butter, melted
1/4 cup firmly packed brown sugar
3/4 teaspoon ground cinnamon
1/2 teaspoon salt
1/4 teaspoon ground cumin
1/4 teaspoon ground nutmeg
teaspoon crushed red pepper
1 (1 1/2-pound) Salmon fillet
Combine all glaze ingredients in small bowl. Place salmon onto grill, skin-side down. Brush salmon with glaze. Close lid; grill 6 minutes. Brush salmon with remaining glaze. Continue grilling until fish flakes with fork (9 to 10 minutes).
Oven Directions: Heat oven to 425°F. Place salmon onto aluminum foil-lined 15x10x1-inch baking pan. Brush with glaze. Bake 6 minutes; brush with remaining glaze. Continue baking until fish flakes with fork (10 to 12 minutes).
