Venison Red Pepper Pasta
My kids devoured this meal fast. I’m glad they liked it but I got maybe three bites out of this total. No joke, they will attack pasta with vengeance and if you think they will be left overs? Think again. I ought to double it next time so I can actaully eat more than an ounce! ha
Quick and easy this dinner can be done in under 30 minutes , perfect for busy nights. Serve it up with a salad on the side.
Ingredients
1 box penne pasta
2 (12-ounce) jars roasted red peppers
1 cup grated Parmesan
4 tablespoons olive oil, divided
4 cloves garlic, minced
1/2 lb of venison ( ground) you can use ground beef and or even top sirloin ground up.
1 large red pepper chopped
Parmesan cheese
Directions
Cook pasta according to directions.
Red pepper sauce-
Combine red peppers, Parmesan, and garlic in food processor. Season with salt and pepper. Add in the half the olive oil slowly, season with salt and pepper, to taste.
Heat remaining olive oil in a large skillet over medium high heat, add in the chopped pepper, till heated slightly. Add ground venison and cook until browned and cooked through Stir in pasta and red pepper mixture until well combined. Sprinkle with Parmesan cheese or even mozzarella cheese .

Brings back a lot of memories from when I was growing up and my mom would try and hide the venison from us, LOL. We could always tell. This looks very good and since I now do not have access to venison, I most likely will make it with beef.
