The missing Mini Chocolate Chip Muffin Recipe
Each and every morning for the last 10 years or so I have made these mini chocolate chip muffins before school for the kids lunches. Everyday mind you. Don’t even know where the original paper I wrote it down on is anymore. I’ve made it so many times that I know it by heart.
Funny thing though is, this past Christmas my daughter got a empty recipe book in which we are starting to fill with her favorite foods, these bite sized fun muffin snacks was a go too! While I searched for the paper it hit me- duh! Jump on the website I told her. Twenty minutes later though she informs me there is no such recipe on my site.
How could this be? This is an easy, fun, simple and family pleasing snack why wouldn’t I have added it? It had to be a mistake.
It’s not a mistake. Somehow, and I really have no clue how this happened, but I never , not even once attempted to write this recipe up on the blog. Not even a draft! Not even a picture upload! Worst thing is? I’ve even posted pictures of these cute little muffins on social media and told people to search on my site for them. Ahhhh
While I am still trying to come to terms on how this even happened I’m going to share the recipe before something else happens to it as- apparently I have no record of it even being written down! Yikes!
As I said earlier, these are really easy to make and my kids just love them, so I hope you enjoy!
The missing Mini Chocolate Chip Muffin Recipe
Ingredients
- 1 1/2 cups flour
- 3/4 cup sugar
- 2 tsp baking powder
- 1/2 tsp salt
- 1 egg
- 1/2 cup milk
- 1/3 cup oil
- 1/2 cup mini chocolate chips
- **1 tablespoon ( maybe more) of chocolate cocoa powder see end of instructions
Instructions
- Preheat oven to 350F
- Spray 2 mini muffin pans with cooking spray
- In large bowl combine all the dry ingredients (except the chocolate chips) and whisk together. Add in your wet ingredients one by one then whisk together until well combined. Fold in your chocolate chips. Spoon batter into the prepared muffin tins ( you want them to be about 3/4 full) Bake for about 14-15 minutes or until toothpick inserted in center comes out clean.
- * When I spoon in 16 mini muffins ( half the pan) I mix in a tablespoon or more of chocolate cocoa to make the last half of the batch chocolate. I just barely stir the powder in and it makes a great marbled effect. This is optional of course.
- This makes about 30 mini muffins.
