Apple Bread
My awesome kiddos picked some apples for me this past weekend!
While small, they are mighty in taste! A little too tart to eat raw, so I am going to get creative in using every single one of them. I’m hoping to figure out a way to make granola bars with them for our hiking trip this week but so far everyone wants me to make apple pie. If I made one apple pie I need to make two as I will just eat the first one myself….. Not even joking. Apple pie is my favorite pie- the only pie I love! So, while tempting, I kinda want the apples to last a bit more than just two apple pies for us to all enjoy.
The first way to use up a good amount of apples was making four loaves of Apple Bread. Super easy recipe, the kids can help make this and even stir if you have little ones wanting to jump in with baking.
- 1 1/2 cups flour
- 1 teaspoon ground cinnamon
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/4 teaspoon baking powder
- 1 beaten egg
- 1 cup of sugar
- 2 cups of finely shredded apples
- 1/4 cup oil
- Preheat oven 350F
- Grease the bottom of a bread pan ( 8x4x2)
- In a medium bowl combine the flour, cinnamon, baking soda, salt and the baking powder. Make a well and then make a well in the center for the wet ingredients later on.
- In another owl combine your sugar, egg, oil and the shredded apples. Mix together well before you pour into the dry ingredients. Mix until just moistened, the batter will be lumpy and a little hard to mix easily. Spoon the batter into the prepared pan getting is as even as possible. Sometimes dump the mixture and let it sit for five minutes so it all settles evenly. Cook for about 45-50 minutes or until a toothpick inserted in the center comes out clean.
- Cool completely on wire rack. Wrap or store in ziplock bag in the refrigerator before slicing.
- Quick breads are best eaten the following day as the flavors will really pop as it had time to sit. The bread is easier to cut the following day as well, as when it's warm ( we all love warm bread!) will crumble very quickly. My kids find it hard to wait so long that's why I make so many loaves at once, this way it makes up for the waiting.
While I made four loaves, I’m already down to three and haven’t even gotten a slice yet! Ha! The kids really enjoy this bread, it’s great for day trips, or hiking and even morning breakfast when the kids don’t want much to eat. You can use any apples you like, the flavor is always amazing! If you find yourself with bushels of apples you can make several of these loaves, cool completely wrap in foil than seal in freezer ziplock bags to freeze the loaves. I do this all the time when I make more than one loaf, simply take the bread out an hour or so before you want to use it and you’re all set!
