Banana Walnut Muffins

There are a few rare times that when I pick up banana’s they are actaully eaten within a few days, mostly though it’s a few banana’s gone, 2 or 3 left and just sit there….Waiting….begging to be eaten, yet they aren’t.  I’m almost convinced that the kids and my boyfriend purposely leave a few just so they can point out how they’d go bad and it’d be a good time for banana bread or muffins. Sneaking but it works everytime. 

This time around instead of making the same old banana bread or even same old muffins I made Banana  Walnut Muffins!

This lumpy muffin was the left over batter and extra nuts at the bottom of the bowl. I wasn’t going to use the picture as it wasn’t the best when I realized the kids ate all the other walnut muffins, ha so I had to use it.   Oh well, even the small muffin tasted great! 

They turned out really good, though I think next time I’ll sprinkle the nuts on top instead of just baking them inside. Either way, the family loved them and they will be on the list for –what happens to the unwanted banana’s in the house.- 

This is an easy recipe, one most kids can help make with ease. Of course help them out with the oven part but from start to finish they can easily measure, mash, mix and scoop!

Banana Walnut Muffins

Ingredients
  1. 1 1/2 cups all-purpose flour
  2. 1 teaspoon baking powder
  3. 1 teaspoon baking soda
  4. 1/2 teaspoon salt
  5. 3 ripe bananas, mashed about 1 1/2 cups
  6. 3/4 cup white sugar
  7. 1 egg
  8. 1 teaspoon vanilla
  9. 1/3 cup butter melted
  10. 1/3 cup chopped walnuts
Instructions
  1. Preheat oven to 350 degrees F
  2. Use either paper liners or coat the muffin pan with non stick spray.
  3. Add all the dry ingredients together in one bowl, set aside. In another bowl add all the wet ingredients until completely combined. Fold in the dry ingredients with wet , until just combined. Fill the muffin tin about 1/4 full with the batter.
  4. Bake for about 15-20 minutes or until a toothpick inserted into the center comes out clean. * sometimes these cook faster than 1 minutes, so just check at them around 12-13 minutes!
Notes
  1. Sprinkle a few more chopped walnuts ontop of the batter before you bake to make them extra yummy!

    I usually buy a similar muffin prepackaged at the store. I can’t wait to bake these. I know they will taste so much fresher.

    I love both bananas and walnuts and they look amazing! I would keep some walnuts in the muffins, for that unexpected crunch, and also put some on top. You can never get too many walnuts in one muffin!

    Bananas are my Mom’s favorite fruit so they are also her favorite muffin. These look like they were very moist inside, particularly at the bottom.
