Finally, finally I have a food processor! Not sure how I lived without one now that I have it. Funny, same thing I said about the standing mixer I got a few years ago . You really don’t know what you’re missing until you’ve got it- or it’s been taken away!
Carrot Bars
2 small carrots ( shred them using the processor )
1 cup raw pecans
1/2 cup raw almonds
1/4 cup shredded coconut
1/2 cup dried apricots chopped up
1 T coconut oil
1/2 cup chopped dried dates
In the food processor put them through the shredder. Add in the pecans, almonds and coconut. Then add in apricots and dates along with the coconut oil. The moisture from carrots, dates and apricots should make it mix well but you can add a teaspoon of water until it mixes well. It will form into a moist dough, ( not slimy m just a tad sticky to touch. Using parchment paper to line a 8×8 dish dump the mixture into the pan and press flat. Place in fridge to firm up for an hour. Or you can form balls and flatten them . I did both they work very well.
