Chicken Lettuce Taco
It’s HOT! We’re in Northern California, rolling high temperatures, drought, fires, high temperatures.. I mentioned it’s hot right? Somedays it’s just way too hot to turn the oven on, or stand over the stove even. This recipe is one of my go to throw together dinners. It’s easy, it’s quick, you can use what ever is on hand, and the best thing? It’s healthy for you!
I don’t really put sauce on this taco, you can, salsa, avocados, ranch even one of my daughters loves ranch. Lime, lemon juice is also a go too quick flavor add on. You can saute the vegetables that you add on, but sometimes I really like the almost raw properties of it. The best flavor and benefits come from fresh, ripe uncooked vegetables, so whenever you can eat those vegetables raw, go for it! Chop toppings really small if you find yourself not into the bigger pieces, and use chicken, or turkey even thin slices of meat from the previous night if they are on hand.

- 1 cup cooked meat, chicken, turkey, sliced thin steak strips shred the chicken/turkey or cut into pieces
- 1/3 cup chopped onion
- 1/3 cup green bell pepper
- 1/3 cup red bell pepper
- 1/3 thinly chopped carrots
- 1/3 cup cooked corn
- 1/3 cup chopped tomatoes
- romaine, or any other lettuce that looks like a good shell, I used baby butter lettuce
- Lay your lettuce down assemble using your choice toppings with the meat. Add salsa, avocado, your choice of cheese! Sky is the limit!

These look like fabulous chicken lettuce tacos. I need to cut the carbs out and most corn and flour is not good for us anyway.

Awesome idea! We also use lettuce leaves to replace taco shells. My kids love using it as a wrap for the left over meatballs from the spaghetti the other night. Chili, chopped tomatoes and cilatro plus lots of cheese would also make a good lettuce wrap filling.

Yum, this looks good! I like that it is mostly raw because raw veggies are best in the summer time! I like to use them however I can.
