Cranberry Almond Granola
My kids go through cereal fast, it’s hard to keep up. This quick, frugal granola recipe is great and keeps them satisfied. Sometimes I make it with different nuts, depends on what I have on hand, and you can either use Agave Nectar or Honey. Go crazy and change the dried fruit up and make your own mix, all depends on what you want. From start to finish this only takes about 25 minutes.
Ingredients
3/4 cup Honey or Agave Nectar
1 tsp vanilla extract
4 cups quick cooking oats
1 cup sliced almonds ( pecans work great too, so do walnuts!)
1 cup dried cranberries
Directions
Preheat the oven to 350F
In a bowl mix all ingredients together. Place either parchment paper or a SILPAT mat onto a baking sheet. Spread your oats along the mixture and put into the oven. Let cook for about 10 minutes before mixing, make sure to spread back evenly and cook for remaining time. Let it cool, mix up and then place in a airtight container. Can be stored up to a week.

We have a lot of humidity here so I wonder how long it would last – I guess it means eating it right!

I have never tried agave nectar but would like to. This recipe seems simple enough that even I can make it. What a healthy snack.

I'm curious now to try the Agave Nectar in place of honey. This looks really delicious to me.

This looks so good and I love that it is a healthier snack for the kids to enjoy. I would pack this for road trips or other day excursions for the kids.

I have not tried agave as a sweetener, but I know lots of people that love it. I must pick some up.

I am going to try some of this tomorrow. I really like that you use agave to sweeten it. That is one of the sweetners I use besides stevia.

I made granola just the other day. Makes a great snack during the day, instead of less healthy options.
