Crock-Pot Recipe Challenge Day 19: Carrot Soup
This is a great recipe because I can just double it all up and make a bigger batch this one makes small bowls but not everyone likes carrot soup in the house. Make more if you need it simply by doubling, go easy on the curry and ginger though you can’t undo spice in the end.
Ingredients:
6 large carrots, chopped small
1 cup onion, chopped
1 tsp fresh ginger, minced
1 1/2 tsp curry powder
1 3/4 cup vegetable broth
1 14 ounce can coconut milk
sea salt, to taste
Directions
Place all the ingredients into the slow cooker but leave the milk out. Cook on low for 5 hours. Carrots should be soft and you should be able to smash them up. You can scoop out everything and blend or use a potato masher to work them down. It should be easier the longer you cook. Total cooking hour is 6-7 hours. When it’s finished mi in the milk slowly and season with salt and pepper to taste.

Hmm. The carrot soup looks nice and healthy but I am not sure how many people here would go for a bowl. I bet it is really great after comming in from the freezing cold.
