Crock-Pot Recipe Challenge Day 4: Lemon Garlic Pork Tenderloin
You ever just not want to cook dinner? Like at all? In anyway just view it as a time consuming chore where you’d like to close your eyes and have dinner magically appear before you? If you’re groaning and or nodding in response to this then do yourself a favor and get a slow cooker.
Nearly every slow cooker recipe is a toss it and leave it kinda of thing. The sole purpose of it is to create a meal with ease, and let’s face it who wouldn’t want that?
Think of everything else you can do with your time instead of slaving over the stove cooking dinner. Heck, you could even take a nap! Sounds great doesn’t it? While I haven’t been able to grab a nap anytime recently I have picked up spare time whenever I use the slow cooker. This one recipe is a breeze because you can add other ingredients into the crock with the meat. Potatoes, carrots, even stuffing if you wanted. It can all cook together and your entire meal is done at the same time, not to mention you only had to dirty one dish to cook it all. 🙂
Ingredients
1 1/2 pounds pork tenderloin
5 cloves garlic minced
Zest of 1 lemon
Juice of 1 lemon
1/4 tsp cayenne pepper
2 tbsp chopped oregano leaves
1/2 cup olive oil for marinade
Salt and Pepper to taste
*Optional Potatoes peeled and cut into your choice size . Baby carrots or chopped carrots. If you wish to cook this along with the roast place the vegetables in the bottom of the slow cooker first then place the meat on top .
Directions
In a blender add the garlic, olive oil, oregano, cayenne pepper, salt and pepper, zest and lemon juice and blend until smooth. In a baking dish, put the pork loin and pour the marinade over the pork and turn it over to coat well. Cover it up with plastic wrap and set it in the refrigerator for at least an hour.
Place the port into the slow cooker with the remaining marinade. Cover and cook on low for 4-6 hours.
