Easter Treats! -Homemade Cadbury Eggs
A great friend of mine came across this recipe and teased us all with her pictures when she made them. Once I tried making it myself, I was hooked. One of my all time favorite treats at Easter, one I may add you can only find around Easter time, can now be made at home!

Ingredients:
1/2 cups light corn syrup
1/4 cup butter, softened NOT melted!
1 teas. vanilla ( or orange extract , lemon extract, raspberry )
1/4 teas. salt
3 cups powdered sugar
4 drops yelllow food coloring *optional
2 drops red food coloring *optional
1 − 12 oz. bag semisweet or milk chocolate chips or even dark chocolate
2 Tbls. shortening
Directions:
Combine corn syrup, butter, vanilla and salt in large bowl. Beat well with
electric mixer. One at a time, add sugar, mixing by hand after each
addition.
Remove about 1/3 of the mix and place in small bowl. Add yellow and
red coloring and stir if desired. Cover both mixes and refrigerate at least 2 hours.

You may have to put the mixes back in the fridge to harden, they soft quickly, so work in small batches. Forming into an egg shape, place them on a shortening brushed cookie sheet. Once all the Eggs are shaped, store in the refrigerate again for 3-4 hours.
Directions for the Outer Shell-
Combine chocolate chips with shortening in glass bowl. Microwave on high for 1 minute. Then stir and microwave another minute until the chips are all melted.
Use a fork to dip each center into the chocolate, placing them onto wax paper to set. Again, you may want to work in small batches, I had to put the pan in the fridge every other egg to keep them chilled enough to work with better. After all the eggs have been dipped and coated once with chocolate, Chill them again for about 1-2 hours, before dipping for a second coating.
