French Vanilla Chocolate Swirl Cupcakes
These Vanilla Chocolate Cupcakes as any cupcakes were a hit with the kids. I took a tried and true recipe and added cocoa to it because I’ve been craving this Vanilla Chocolate twist soft serve ice cream I used to have as a kid.
They just don’t serve that ice cream anymore, and I do so miss it. You get this small cone, and then the ice cream “twist” both vanilla and chocolate twice the size of the cone itself was added on top in that all too perfect spiral. You had to really go at eating the ice cream to stop it from dripping down the cone and then your hand- but that was almost part of the whole experience. I haven’t been able to find one single soft serve ice cream place since I was a kid, so the next best thing besides making my own ice cream was at the very least making these cupcakes. I still want that ice cream though!
On to the cupcakes- You don’t have to add the cocoa if you don’t want, the vanilla cupcakes will still taste superb, but it is extra special to see the added twist both in the cupcakes and frosting.
- 1 cup granulated sugar
- 1 vanilla bean, seeds scraped
- 1 3/4 cups cake flour
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup unsalted butter at room temperature
- 2 large eggs
- 1/3 cup Greek yogurt
- 1 Tbsp. vanilla extract
- 2/3 cup whole milk
- * 1/4 cup cocoa
- Preheat oven to 350 F
- In a large bowl, add granulated sugar and vanilla bean and beat on medium speed for about 30 seconds or until blended. Add in the cake flour, baking powder, baking soda and salt, and beat for an additional 1 minutes. It should all be well combined before adding the butter. Add in the wet ingredients and beat until very well combined. Should be a smooth thin mixture, make sure there's no lumps. If adding the cocoa sprinkle in the mixture and fold in but don't mix fully so you have some swirls.
- Fill cupcake liners about 1/2 full and bake for about 15 minutes or until a toothpick inserted in the center comes out clean. Cool completely on wire rack before frosting.
- Frosting Ingredients and Directions
- 1 cup of unsalted butter, softened
- 4 cups powdered sugar
- 1/4 tsp. salt
- 1 Tbsp. vanilla extract
- 1 vanilla bean , seeds scraped
- 3-4 Tbsp. milk or heavy cream ( may need more depending on thickness of forsting)
- * 1/4 cup cocoa
- In a large mixing bowl beat the butter for about 1 minute on medium speed until smooth. Add the powdered sugar, salt, vanilla extract, the seeds of a vanilla bean and about 2 Tbsp. milk , beating with each addition until the frosting is the way you like it. Don't add all the milk at once or you may end up with thin frosting.
- * If adding cocoa, take about half the mixture and set aside in a separate bowl. Beat in the cocoa until well combined in remaining mixture. Using a pastry bag with choice tip, spoon in vanilla frosting in one side of the bag and chocolate in the other to create the swirl.
