Lunch Box Challenge Day 10: Messy mouth Turkey Meatloaf Sandwich
Ever make a meal and wonder if any of it actaully made it into the kids mouth when they present most of it on their face? That’s this kind of recipe. Take note: Send napkins to school with this lunch. Wet wipes, warn them and don’t have them wear white either. So why would I post a recipe that would make a mess to start with?
*Make this for your dinner, and slice up pieces for the next day lunch.
2 pounds ground turkey
1 medium red onion, chop it up fine
1 red bell and green pepper, chop them up like a boss!
4 garlic cloves mince these up as fine as you can
1 teaspoon Old Bay Seasoning
2 tablespoons brown mustard
2 tablespoons chopped fresh flat-leaf parsley <- Fresh means Fresh!
1 tablespoon Worcestershire sauce
2 teaspoons ground cumin
1 teaspoon salt
1/2 teaspoon freshly ground black pepper
1 large egg, beaten with an attitude
1 1/2 cups of your favorite barbecue Sauce or make your own ,here’s a homemade recipe to try
2 cups bread crumbs
* don’t have old bay seasoning? Don’t stress, pick up the Italian style bread crumbs and you can cross the seasoning off the list.
Directions
Preheat that oven to 350°F.
Heat your olive oil in a large pan over medium-high heat. Toss in the onion, bell peppers and saute it up. It will take about five minutes till tender. Mix things up and toss in the garlic and cook for three minutes. Remove from head and cool completely. IN the mean time put Mustard, parsley Worcestershire sauce ,cumin, salt, pepper , egg and one cup of the BBQ sauce. Mix it up, add in the bread crumbs and the cooled vegetable mixture. Time to get dirty, roll up those sleeves and mix in that ground turkey till it’s all mixed in. Combine it well.
Grab a 9×13 baking dish. Shape your meat into whatever shape floats your boat today. Go crazy, make small loaves, one large one. ( smaller ones cook faster) Form it, and bake for about 40 minutes. Take it out and dress that meatloaf up with the remaining BBQ sauce. Bake for about 15-20 more minutes until it’s cooked through. Let it sit and serve with more sauce.
Since this is a left over Lunch Box, use whatever is leftover and assemble your sandwich
Sandwich-
English muffin
Salad greens
Sliced Tomatoes
Slice of meatloaf
tablespoons of BBQ sauce
Directions- Place a little sauce on the side of each muffin. Lay lettuce down, meatloaf and tomatoes.You are done. I served this with Green beans, oranges and grapes.
Today’s Lunch Box Tip: With any lunch pack napkins or individually wrapped wet wipes. Encourage the kids to wash hands afterward lunch at school. A great way to get them to wash as long as they need and not that “three second’ rinse under the water is this- Have them sing the Birthday Song while they wash hands. It will encourage them to really wash properly and long enough .

Is that a Homemade English Muffing ?? I have only LOVED one meatloaf in my life (So Far anyway) and that is the one your mom makes, unfortunately there is never enough left for sandwiches. This one looks interesting we may have to try it DAD
