Lunch Box Challenge Day 29: On the Go Chicken Hummus Wrap
Today’s lunch was supposed to be total vegetarian but the kids changed it up on me. They are my taste testers and while they still ate it without meat they did devour the one with chicken in it much more. This is what happens when you allow the kids to discuss what they like and don’t like you get information back and it’s helpful. Why waste money on something they won’t eat? You can also gather these details for future lunches or even dinners. Mix it up though, experiment try different varieties or ask them what they think would make it better. You involve the kids more in the process you will find you may deal with far less struggles than before. On to the lunch!
On the Go Chicken Hummus Wrap
This is a perfect busy day lunch, even for adults. Grab and go chomp it down.
10 inch tortillas
2 Tbsp hummus ( you can use the hummus recipe I posted here )
1/2 cup shredded lettuce
1/3 cup shredded carrots
1/3 cup zucchini
1/3 cup julienned cucumber
1/4 cup black olives
Left over pieces of chicken
Parchment paper
Start with a tortilla and lay it down on parchment paper. Take a good two tablespoons of the hummus and place it in the center of the tortilla, leaving about an inch on the top and bottom then a few inches empty on the sides. Place your shredded lettuce on top, then your carrots and cucumbers and zucchini as well as the cucumber. You don’t have to add any meat but I made these without meat and the kids said it needed it in there. I used left over pieces of roast chicken. Place that on top then starting at one end fold over mixture, repeat with other end then take one side and fold it in as well, then the very last side over the center You should have made a burrito 🙂
Cut this in half making sure you cut through the parchment paper. Now you wrap with the parchment paper. folding just leaving the very open end opened. This keeps everything neatly tucked in.
I served this with Raspberries and Broccoli
Today’s Lunch Box Tip: Make it a routine to get together with the kids over the weekend and discuss lunch ideas and or go to the store for items Make a lunch menu, you can pick the days they have hot lunch and bagged lunch then head to the store for the items you don’t have on hand. Bag up your vegetables and fruits on Sunday this way all you really need to do is assemble a salad or sandwich and put it into the lunch box the morning off. Make it as simple as possible and keep to a routine about it, it becomes habit after that.

I agree, don't waste money on something they won't eat. Give them what the want as long as their choices are still healthy. Beautiful pictures. I can taste the berries.

My 7yr is the only one in the house that will eat hummus so this would be good for her. I am not a hummus fan but I imagine I could always add a different condiment.
