Lunch Box Challenge Day 30: The Mother of all Waldorf Sammies
Waldorf Sandwich? You have got to be kidding me!
That’s what you thinking right? Really, it doesn’t seem like a kid friendly lunch does it? Well it is! Want to know why? It has sweet stuff in it, and a bunch of other yumminess that kids cannot turn down. How’d I come up with it? Well if you want the honest truth I haven’t been to the store in a week and needed to use up a bunch of left over ingredients which all pointed right to a Waldorf Salad. Not to mention that I needed something over the top and perfectly awesome for the very last day of the Lunch Box Challenge.
Yes, you have made it to the very last day! Thanks for keeping up with me this far I hope you have enjoyed it. So without boring you even more with my nonsense ramblings I bring you –
The Mother of All Waldorf Sammies
dun dun duuuuun
Ok so it’s not that dramatic but work with me here, it’s the last day!
I would name this Waldorf Salad Sandwich but I am weird so, I didn’t. Simple as that
Ingredients
1 cup shredded chicken
1 tablespoon lemon juice
1/3 cup low-fat Greek yogurt
2 tablespoons light mayo
1/2 cup red seedless grapes sliced and halved
1/2 cup chopped celery
1/2 apple, chopped
1/4 cup chopped walnuts
2 tablespoons raisins
Pepper to taste
Spinach
Your choice of bread, rolls or English muffin
*optional red chili flakes or red pepper for sprinkling. Kids may not like it but I did!
Take the first 10 ingredients and mix them up in a bowl. Shake it, toss it, have the kids attack it, what ever works for you. Spin those suckers around till it’s all nice and mixed up.
Grab your bread or roll, whichever place baby spinach on it and slap a good portion of the salad ontop. Place other sliced bread on top and eye the perfection you just made. Perfect. Awesome. It’s pretty isn’t it? You’ve completely the Mother of All Waldorf Sammies!

A summary of Lunch Box Tips from the Challenge: Always remember napkins or wet wipes- kids are messy, so prepare for it! Don’t over do the containers, and don’t over do portions. Variety is the key, stay within seasons for vegetables and fruits and don’t forget to use up left overs. Set aside an area in the pantry and fridge for lunch items and foods to make things easy to grab and go. Always remember to put a small ice pack in the bag for items to stay cool, or freeze their juice/water the night before. This will keep the bag cool till lunch. Invest in a good thermos for soups or warm items.
Prepare as much as you can the night before to make it easier on both you and the kids for busy days. Try to keep the weather in mind, or school functions, remember school parties will be full of junk so make sure their lunch is lite but healthy. Days they will be on field trips you want to energize the kids not sugar coat them so keep activities in mind.
Get together with the kids on the weekends to make out a weeks worth of lunch plans, stay organized and don’t let a bagged lunch get the best of you. It doesn’t have to be fancy, but it does not have to be boring. Introduce new foods at home and encourage them to try it more than once. Have the kids help prepare or suggest new ideas for their lunches, make this a routine and it will become a healthy habit not just for the kids but for the family.
Empower your kids with choice! Letting them prepare and or assemble a simple lunch ( the DIY pizza kit, the Everything but the Kitchen Sink Salad) this puts your kids in charge and makes them feel proud of what they created. Give this choice to them, and watch them grow. Last but not least, always always have fun with your food. 🙂
